'Part 1  For shrimps   2 lbs of small fresh shrimp 1.5 to 2 Tbsp of sea salt  Above need to marinade with salt and keep in the jar for 5 days at room temperature   After 5 days  4-5 Tbsp of of palm sugar syrup ( adjust your need) 2 Tbsp of fresh ground galangal 4 Tbsp of roasted rice powder ( adjust when needed) Need to fermented for 1-2 days depend on the weather   Part 2  For Papaya  1/4 cup of palm sugar syrup 1 good size Green papaya (shredded,slice, cut in anyway you like ) Some carrot (optional) Ice water  1/2 cup of slice ginger cut into strip  Fresh ground galangal  Roasted rice powder  Sea salt  All of the above is base on your own taste and preferences but make sure to watch the video for complete step to get the idea.
